Lamb Vindaloo Riblets

Ribs are a favourite of just about everyone, these Lamb Vindaloo Riblets are a great meal to prepare if you are having guests around. They are delicious and pretty easy to prepare but will definitely impress, just remember to prep the night before to get the most from the marinade.

Lamb Vindaloo Riblets

Ingredients for Lamb Vindaloo Riblets

Lamb Ribs

15 cloves garlic smashed into fine paste

2 inches ginger smashed into a paste

3 green chilli peppers finely chopped

250ml Danone plain yoghurt

For the Yoghurt Marinade

250ml Danone plain yoghurt

2Tbsp cumin seeds

2Tbsp coriander seeds

5 cloves

1tsp fenugreek seeds

4 dried red chilli peppers

1Tbsp black peppercorns

3Tbsp soft brown sugar

Method

  1. Mix together all the ingredients for the marinade.
  2. Massage the marinade into the riblets and let marinade overnight
  3. Pre-heat the oven to 125 degrees
  4. Place the ribs in the oven and allow to cook for 2 hours
