Zuchini is a pretty versatile vegetable but not one that everyone enjoys but this Zuchini Balls recipe is delicious and your children won’t even realise that it is a vegetable.
Ingredients for Zuchini Balls
2Tbsp parmesan cheese
salt and black pepper
Olive oil for coating the pan
- Grate the zuchini using a grater or food processor. Place in a bowl, sprinkle with a little salt and set aside.
- Squeeze as much water from the zuchini as possible. Add the parmesan cheese breadcrumbs, egg, herb and salt and pepper and mix well.
- Preheat the over to 200 degrees. Line a tray with aluminum foil and olive oil.
- Form the mixture into balls, coat with flour and bake in the oven for 20 minutes.
Serve with our Plain Yoghurt Tzatziki.
